My wife Joan says I only remember two things: recipes and jokes. She may be right. But lucky for those of you looking for a creamy pumpkin soup recipe this Fall, I recall my favorite from my years as the Chef/Owner of Schroeder’s Restaurant in downtown Boston. If you were not familiar with Schroeder’s back in the day, we were a German-themed restaurant featuring International cuisine. This recipe blends the subtle notes of the leeks with the slight caramelization of the roasted pumpkin. Make sure you use heavy cream and unsalted butter to achieve the smooth richness and full flavor combination.
